This easy Coronation Chicken recipe for sandwiches shows you how to make a homemade version of a British classic quickly from scratch.
Ingredients
- 4 chicken breasts cooked and chopped
- 2 tbsp olive oil
- 1 small onion finely chopped
- 1 tbsp curry powder
- 1/2 cup (120 ml) chicken stock
- 1 tsp tomato puree
- ½ lemon juiced
- 2 tbsp mango chutney (or apricot jam)
- 1 cup (240 ml) mayonnaise
- 3 tbsp (45 ml) double cream
Instructions
- Heat the olive oil in a saucepan over medium heat. Add the chopped onion, cover, and sauté gently for 5 minutes until the onion is soft but not browned.
- Stir in the curry powder and cook for another 2 minutes to enhance the flavor.
- Add the chicken stock, tomato puree, lemon juice, and chutney. Stir until the mixture starts to bubble, then cook for 5 minutes until it reduces and thickens.
- Allow the mixture to cool for about 30 minutes, then stir in the mayonnaise and double cream.
- Add the chopped chicken and mix thoroughly.
- Serve over cold rice.
