Ingredients
  

  • 4 chicken breasts cooked and chopped
  • 2 tbsp olive oil
  • 1 small onion finely chopped
  • 1 tbsp curry powder
  • 1/2 cup (120 ml) chicken stock
  • 1 tsp tomato puree
  • ½ lemon juiced
  • 2 tbsp mango chutney (or apricot jam)
  • 1 cup (240 ml) mayonnaise
  • 3 tbsp (45 ml) double cream

Instructions
 

  • Heat the olive oil in a saucepan over medium heat. Add the chopped onion, cover, and sauté gently for 5 minutes until the onion is soft but not browned.
  • Stir in the curry powder and cook for another 2 minutes to enhance the flavor.
  • Add the chicken stock, tomato puree, lemon juice, and chutney. Stir until the mixture starts to bubble, then cook for 5 minutes until it reduces and thickens.
  • Allow the mixture to cool for about 30 minutes, then stir in the mayonnaise and double cream.
  • Add the chopped chicken and mix thoroughly.
  • Serve over cold rice.
