For the Perfect Melting Moments

  • Kneading the dough: Once the dough is formed, avoid kneading as it can toughen the Melting Moments biscuits. Instead, handle it gently to shape it. If the dough is too wet and sticks to your fingers, lightly dust it with flour.
  • Use softened butter: Though biscuit usually call for chilled butter also avoiding to crush the butter completely, for melting moments you should use softened butter.
  • Whisk or Hand Mixer: Either method works well! Just stop mixing as soon as a soft dough forms to avoid overworking it.
  • Egg Yolks: While older recipes like the BERO one may omit eggs, it’s important not to omit the egg yolks in this Melting Moments recipe. The ratio of flour to butter in this recipe is 10:8, unlike the BERO recipe, which is 10:10.

What You Need

  • Flour – Use self-raising flour or swap to all-purpose flour adding 2 teaspoons of baking powder and 1/2 teaspoon of table salt.
  • Oats – Use rolled oats or swap with shredded coconut.  Though Mary Berry’s Melting Moments recipe calls for oats, melting moments always come in two kinds – the ones rolled in oats and the ones covered with shredded coconuts.
  • Butter – Use unsalted butter softened at room temperature. 
  • Sugar – Use golden caster sugar or swap it with normal sugar.
  • Eggs – Use 2 large egg yolks only
  • Flavourings – You need a few drops of vanilla extract and optionally add 1 tbsp of lemon rind and 2 tbsp of lemon juice.
  • Cherries – Use Glacé cherries or a little jam. In this case, you might need to dig a small hole similar to what we do in jam buns.
  • Icing – Australians like to make them as a sandwich with icing filling. Do you want to try it? Mix 120g softened butter with 220g icing sugar.

Save Melting Moments For Later

  • LEFTOVERS – Store for up to 7 days in an airtight container. Refrigerate if you live in a hot humid environment. 
  • MAKE AHEAD – Prepare the Melting Moments dough according to your recipe. Once the dough is mixed and formed into balls, instead of baking them immediately, you can refrigerate the dough for up to 1-2 days. Store the dough tightly wrapped in plastic wrap or in an airtight container to prevent it from drying out.

Ingredients

  • 225 g (8 oz) softened butter
  • 175 g (6 oz) golden caster sugar
  • 2 large egg yolks
  • A few drops of vanilla extract
  • 275 g (10 oz) self-raising flour
  • 50 g (2 oz) porridge oats
  • 12 Glacé cherries optional

Instructions

  • Preheat the oven to 190°C/Fan 170°C/Gas 5. Line 2 baking trays with baking parchment.
  • Measure the butter, sugar, egg yolks, vanilla extract, and flour into a mixing bowl and beat together to form a soft dough.
  • Divide the mixture into about 36 portions. Form each piece into a ball and roll in the oats to cover. Flatten each ball slightly and top each with a quartered glacé cherry, if you like. Place on the prepared baking trays.
  • Bake in the preheated oven for about 20 minutes or until golden. Allow to cool slightly on the baking trays for a few minutes before lifting onto a wire rack to cool.
