- 1 leek
- 1 apple
- 4 sprigs fresh thyme
- 500 g minced pork
- ½ tsp mustard seeds
- 500 g puff pastry
- 1 large egg free-range
Preheat oven to 200°C/400°F/gas 6.
Wash, trim, and dice the leek; core and dice the apple; pick the thyme leaves.
Mix pork, leek, apple, thyme, and mustard seeds in a bowl. Season and set aside.
Roll pastry to 1cm thick and into a 35cm x 30cm rectangle. Cut it in half lengthways to create two long, narrow strips. Then place a strip of mince down the center of each piece.
Brush edges with beaten egg, roll up, and seal. Brush with more egg, cut each strip into 3 rolls or 2 rolls to get 4 big sausage rolls.
Score tops and bake for 20 minutes or until golden and cooked through.
